Healthy Pad Thai
I’m on a mission to eat healthy (or healthy-ish) without feeling like I’m on a diet. Here is a recipe to satisfy your Asian food craving - Hope you it helpful!
ZOODLES
Zucchini 2-3 zucchini thinly sliced or spiralized into zoodles
Carrots 1 cup thinly sliced carrots
Cabbage 1 cup thinly sliced cabbage
Bell Pepper 1 red bell pepper thinly sliced
Chicken leg pieces - cooked & shredded (around 2 cups) (you could sub this for Tofu and make this a vegan dish)
SAUCE
3 TBSP Peanut butter
2 TBSP Honey
2 TBSP Vinegar
2 TBSP Soy Sauce (low sodium)
Red Chili flakes - depends on your sense of adventure
Combine the sauce ingredients listed above in a pan and cook for 2 mins on low heat till they turn into a paste
STEP 1: Heat oil - add the garlic then the harder veggies first (carrots, bell pepper and cabbage)
STEP 2: Throw in the noodles (zucchini noodles if you haven’t understood it yet), add the cooked chicken and cook for a few min
STEP 3: Add the sauce and mix well
TOPPINGS:
Serve with a topping on roasted sesame seeds, lemon, peanuts and cilantro.
Add some sliced raw onions if you have been married for over 5 years - adds a punch!
