Peanut Butter
Living alone for almost a decade in NYC isn’t easy. It was my choice and need for “independence” that led me to the city of dreams. I lived on the Upper East Side and rode the 4-5-6 subway for 40mins to Wall Street. Being an Underwriter was like being at the bottom of the food chain and I had to get to work by 8:00am at the very latest. Why am I telling you all this? Because it left me little or no time for breakfast. I used to grab a coffee from a deli before running to the AIG building on 72 Wall Street. The habit became the norm for over 15 years breakfast to me has been a cup of tea or coffee.
This changed in 2017 when I saw my mother shed 8 kgs of her steroid induced weight. She had been working with a family friend Zareen on a nutrition plan and the results where incredible in 2 short months. What was even more incredible was she was eating more and losing weight. I decided to get onto the plan as well and in two months dropped 4 kgs. It was an absolute miracle for me - someone whois close to their ideal weight and had always wanted to be just a wee bit slimmer.
Zareen changed my relationship with food. The biggest change was breakfast. Instead of reaching for the cup of caffeine - I was now EATING wholesome food!
I started to eat peanut butter in the morning and initially gained bit of weight. It wasn’t the quantity but rather the quality of peanut butter. Skippy (the culprit) has additives that are far from nutritious. But I was hooked to the taste and it prompted me to look up a recipe and realise - IT’S SO EASY TO MAKE PEANUT BUTTER! I started making the delicious goo every two week.
Here is my recipe:
1 cup peanuts
Roast for 10mins
Rub off the peels with a cloth
Blitz on high in a food processor
Add a pinch of salt
Add a tablespoon on honey (optional)
Add a teaspoon of olive oil (optional)
